WINE OF ORIGIN – SIMONSBERG, STELLENBOSCH
Our Chardonnay 50th Special Editon are best barrels for 3 vintages to celebrate Dudley and Lyn Marklews 50th year of owing De Goede Sukses and their 50th wedding anniversary. It was hand picked and vinified from a selection of rows out of a top-performing dry land block of vineyard on the farm. Grapes were hand sorted and partially whole bunch pressed. Alcoholic fermentation was done in a selection of French 300 litre barrels where it matured for 10 months - 1.5 years before bottling.
Oaking – 10% New French barrels, 90% 2nd and 3rd fill French barrels. The lease in the barrel was stirred once a week to add a buttery full bodied complexity and mouth feel. Fermentation – grapes were barrel fermented at a low temperature to ensure fruit flavours on both nose and palate. There is no Malolactic fermentation in order to preserve the natural acidity. Batonage (stirring of the lease) is applied to the barrels to add complexity.
The wine is wonderfully rich and indulgent, with hints of citrus, lime on the nose. The acidity makes the wine very elegant with notes of mineral and chalk. This is
completed with lovely butterscotch mid pallet. Chardonnay is drinking well now, but can be enjoyed 2-6 years after vintage. Food Pairing: Fish (calamari, salmon), Sushi, Thai curry, soups
