WINE OF ORIGIN: SIMONSBERG, STELLENBOSCH

Cabernet Franc 2021 was hand-picked at optimum ripeness, sorted and vinified from a 9 year old trellised, dry land vineyard.

The terroir leans itself to great Cabernet Franc’s. The combination of the soil, slope and the great airflow through the vines makes it so easy to make exceptional wines.

Grapes get pumped and plunged numerous times during a long fermentation period for maximum extraction. After fermentation, grapes were lightly pressed.

Oaking – 18 months in 10% new, 30% 2nd fill barrels. MLF was done in the fermenter. 95% French, 5% American oak.

I pick up Dark Cherry and Raspberry. There is a lot of Coffee and dark Chocolate on the pallet, lingering long after tasting due to the full structure of the wine. This is a highly concentrated wine.

I would pair this with most red meats and smoky dishes. This wine is bold enough to handle heavy spice as well. The wine will pair well with Lamb Shank and Beef curries

 This wine is still very young due to incredible concentration. It can however be enjoyed now with food but will improve with bottle age and can still be drunk 10 years from vintage.
